Flaky Not Flaky Bringing Sconuts and Chocolates to Truist Plaza Downtown

Local bakery and chocolate maker Flaky Not Flaky is taking a food court space at Truist Plaza on Peachtree Street.

Flaky Not Flaky, an Atlanta bakery and chocolate company, has lined up a downtown storefront. As reported in May 2024, the business was slated to open that summer inside Truist Plaza, the high-rise at 303 Peachtree Street, in a 939-square-foot space within the building's food court.

The food court space has had a previous occupant. The spot was formerly home to Canyon Grill.

For many Atlantans, the downtown counter will not be a first encounter with the brand. Flaky Not Flaky has sold its sweets at farmers markets around the city, and they can also be ordered online. The Truist Plaza location gives the business a fixed address on Peachtree Street, in addition to its market stands and online orders.

The company is a family operation. Miguel and Anna Caraballo, a husband-and-wife team, started Flaky Not Flaky in 2021. In the years since, they have built a lineup centered on baked goods and chocolate.

The signature item is the sconut, a cross between a scone and a donut. Sconuts come in a range of flavors, among them apple crumble, buttermilk maple, lemon curd and strawberry brie, with more on the list. Beyond the sconuts, the menu covers cakes and a set of chocolate confections that includes bonbons, bars and truffles.

Plans for the Truist Plaza counter go beyond pastries. The location is set to serve breakfast and lunch items as well as gelato, and its coffee will come from La Colombe.

Put together, the plan pairs the sconuts, cakes and chocolates the Caraballos are known for with coffee, gelato and breakfast and lunch fare, all in a food court counter inside one of Peachtree Street's office towers. For a company that has sold at farmers markets around Atlanta, the Truist Plaza space puts the brand downtown and gives people who work in and visit the building a place to find its sweets.
